Introduction

I love Southern "greens", but I wanted to put a Floridian twist on them. These mustard greens smell and taste very tangy.

Please, by all means trim some of the fat off the pancetta if you want. It won't change the flavor.

Ingredients

    1 bag Glory Raw Mustard Greens
    2 chopped celery stalks
    2 slices pancetta
    2 tbsp olive oil
    5 tbsp sour orange juice
    1 tbsp black pepper
    2 packets of stevia
    1/2 cup apple cider vinegar

Directions

Chop celery and pancetta and brown in the olive oil in a cast iron pan on medium heat. You want the pancetta to render its flavor. Once it starts to crisp up, I would remove any remaining fat.

Stir in sour orange, vinegar, and spices.

Slowly add in greens until they are cooked down.

Reduce heat to simmer and let reduce for 20 min.

Makes 9 1/3-cup servings.

    Replace sugar with 1 Splenda packet. Remove pancetta & OJ. Reduce oil to 1 T. Reduce black pepper to 1/4 t. Add 1/4 t of red pepper. - 3/20/12
