Ingredients

    1 can Del Monte Petite Cut Diced Tomatoes undrained
    1 cup chopped onions
    1 chopped yellow bell pepper
    1/2 cup hot salsa
    2 tablespoons capers drained
    2 tablespoons balsamic vinegar
    3 cloves garlic, minced
    1 tsp oregano ground
    4 tablespoons basil
    1 medium eggplant, peeled and cubed
    2 tablespoons extra light olive oil


Directions

Mix and put in slow cooker on low for 7 hours or until vegetables are tender
