Introduction

In my house we hardly ever have enchilidas the "authentic" way because I hate trying to roll them and keep them rolled. Call me Lazy Girl but this bake rocks! Ingredients

    1 lb of Lean Ground Beef
    1 TBL Chili Powder
    1 TBL Onion Powder
    1 TSP Salt
    16 Corn Tortillas
    3 Cups of Shredded Chedder Cheese
    1 Medium Onion, chopped
    3 6oz Cans of Tomato Paste
    3 Cups of Water, or more depending on how think you like you sauce
    4 TBL of Chili Powder or more to taste
    2 TSP Chipolte Pepper Powder
    1 TBL Onion Powder
    2 TBL Sugar

Directions

Preheat Oven to 350 degrees.

Chop onion into small pieces.

Place Ground Beef into fry pan,that has been sprayed with cooking spray, on medium, and begin cooking while breaking meat up into small pieces. Add 1 tbl of chili powder, 1 tbl Onion Powder, and 1 tsp salt to meat.. When meat is done drain off as much of the grease as possible and set aside

In a sauce pot, add tomato paste,water, and remaining chili powder, onion powder, chipoltle pepper powder, and sugar. Mix well and cook on medium until heated through.

Using a clear baking dish t, doesnt burns as easy, spray the dish, liberally with pam. You will want a baking dish the size that will allow for this set up:

Now in your baking dish add just enough sauce to cover the bottom of the dish. Add four tortillas in the design I described above and take 1 more to tear apart and fill in the gaps. Place all of ground beef on this level with 1 cup of cheese, and enough sauce to cover cheese. Repeat tortillas step and now add 1 cup of cheese and all of the onions and enough sauce to cover. Finally repeat tortillas step and all remaining sauce and cheese.
Place in preheated oven, and bake for 15 minutes. Upon removing from oven, let sit 5 minutes before cutting.
