Found these to be dense, but tasty. Found these to be dense, but tasty.
Number of Servings: 18


    1 cup pumpkin, mashed
    1/2 cup unsweetened applesauce
    1 egg
    2 egg whites
    1 Tbsp. canola oil
    1 2/3 cup flour
    1 1/4 cup sugar
    1 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. cinnamon
    1/2 tsp. cloves


Beat pumpkin, applesuace, egg, egg whites and oil. Add dry ingredients nad mix well. Spoon into 18 papered muffin tins. Bake at 350 degrees Fahrenheit for 15 minutes.

Optional filling - not included in nutritional facts - 6 oz. reduced fat cream cheese, 1/4 cup sugar, 1 Tbsp. flour and 2 egg whites - beat all and spoon into middle of each muffin.
