    1 tsp olive oil
    1/2 c chopped bell pepper
    1/3 c chopped onion
    1 can each pinto, black, and great northern beans
    1 can rotel


saute the peppers and onions in the olive oil for a couple of minutes. Transfer to slow cooker, add the beans, tomatoes, and cayenne and cumin to taste.

Cook on low for 8 hours.

Makes 5-1 cup servings
