Number of Servings: 10

Ingredients

    Vegetable Broth, 3 cup
    Whole Grain Quinoa, 1 serving =.25 cup dry, 1 cup
    Onions, raw, 2 cup, chopped
    Green Peppers (bell peppers), 1 cup, chopped
    Peppers, sweet, red, raw, sliced, 1 cup
    Cauliflower, raw, 1 cup
    Eggplant, fresh, 1 cup, cubes
    Carrots, raw, 1 cup, chopped
    Garlic, 3 cloves
    Whole Peeled Plum Tomatoes, 2 cup
    Beans, black, 2 cup
    Thyme, ground, .5 tbsp
    Basil, .5 tbsp
    Ginger, ground, .5 tsp
    Salt, 1 dash

Directions

In a large pot, combine all ingredients and bring to a boil. Reduce to medium heat and cook for about 30 minutes stirring often to avoid sticking. Thicken with corn starch to taste.
