    1 Large Potato
    2.5 c Water
    1 can (10oz) Chicken Broth
    1/2 c Heavy Whipping Cream
    2 tbs Green Onion (chopped)
    2 cloves garlic (chopped)
    2 tbs butter
    1 tsp olive oil
    1 c Cheese shredded (Calories Calculated with Cheddar)


This soup is actually better the next day when the potatoes have time to soak in the soup, but good for a cold night when there's no time. Makes 4 - 2cup servings

- Wash potato, poke holes in it with a fork and wrap with a wet paper towel and then in a plastic grocery type bag. Microwave it for 5 min.

while it's cooking...

- melt olive oil and butter in bottom of 2 qt pan
- saute chopped garlic and onion in butter
- add chicken broth and whipping cream
heat to slow boil then add cheese

potato should be done by now
- remove skin and chop potato into pieces
- add potato to liquid and allow to return to slow boil
- add water, salt and pepper to taste
