Ingredients

Olive Oil, 1.5 tbsp
*Cumin seed, 2 tsp
Mustard seed, yellow, 2 tsp
Onions, raw, .5 cup, chopped
Lentils, 1 cup
Broccoli, fresh, 2 cup, chopped
Vegetable Broth, 2 cup
Water, tap, 2 cup
Salt, 1 tsp
Soy Milk, 2 cups
Soy sauce (tamari), 2 tbsp
Lemon juice, 2 tbsp
*Tumeric, 1 tsp
Garam Masala, 1 tsp.
Red Pepper Flakes, 1/2 tsp
Directions
In a soup pot heat the oil over medium-high heat. Stir in the lentils, onions, mustard seed and cumin. Fry in oil until the onions are soft, the seeds start to pop and the lentils begin to change color.
Add the broccoli, stock. water and salt. Bring to a boil and then simmer for 25-30 minutes. The soup should be thick but still a little watery and the broccoli should be tender.
Add the soy milk, soy sauce, lemon juice, tumeric, garam masala and red pepper. Turn down the heat. Do not bring mixture to another boil or the soy milk may change color. Serve immediately.
