Introduction
My version of Dutch Apple Pancake is not very sweet. You can increase the honey if desired or use agave nectar or sugar. You can use regular milk of your choice in place of the soy milk. Ingredients

2 tablespoons unsalted butter
2 Granny Smith apples, peeled, cored, and cut into 1/4-inch slices
3 large eggs
3/4 cup unsweetened soy milk (or other milk of your choice)
1 tablespoon honey (or other sweetener)
1/4 cup whole-grain flour
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Directions
Makes 4 servings.
Preheat oven to 425 degrees.
Melt the butter in a small cast-iron skillet over medium heat. Add the apples and saute until softened and start to brown.
In the meantime, puree the remaining ingredients with a hand-held blender or in a stand-up blender.
Pour the batter over the apples and bake until puffed and browned, about 15-20 minutes.
