    Caramelized Onions:
    3 tbsp. Butter, unsalted
    2 tbsp. EVOO
    2 1/2 lbs. Onions, sliced thin
    2 tsp. Sugar

    Macaroni & Gouda:
    1 lb. Macaroni, whole wheat
    1 quart Milk, 2%
    6 tbsp. Flour, whole wheat
    3/4 lb. Gouda Cheese, aged, grated, about 4 cups


Caramelized Onions:
1. In large skillet, melt the butter in EVOO on medium-high heat. Add onions, salt & pepper to taste, and cook. Stir constantly until onions begin to soften or about 5 minutes.

2. Stir in sugar and cook, scraping the brown bits off bottom of pan frequently, until onions are golden brown, or about 20 minutes.

Macaroni & Gouda:
1. Preheat oven to 350 degrees. In large pot of salted water (boiling), cook pasta until al dente, about 11 minutes.

2. Add pasta and one cup caramelized onions to combine. In medium saucepan or in the microwave, heat milk until steaming.

3. Return saucepan to stove, add flour and milk, whisking constantly for about 3 minutes. Continue until smooth and comes to a simmer. Add 2 1/2 cups of cheese, remove from heat, and whisk until cheese is melted about 2 minutes. Season with salt/pepper to taste. Add cheese sauce to pasta mixture and stir to combine.

4. Spray 9x13 baking pan with non-stick spray. Add the pasta mixture and spread in even layer. Sprinkle 1/2 cup caramelized onions and 11/2 cups cheese over top. Bake until golden and bubbling, about 40 minutes. Remove from oven and let rest 10 minutes before serving.
