Introduction

Although there is no cream in this soup, it has a nice rich flavor. I use the food processor to chop the carrots very fine, but they can also be cooked in the broth, and then blended in a blender. Ingredients

    4 cups carrots, chopped
    1 cup raw onions, chopped
    2 cups low sodium chicken broth
    3 Tbsp light margarine
    3 Tbsp flour
    4 cups 1% milk

Directions

Heat chicken broth in non-stick soup pot. Place carrots and onions into food processor and chop finely. Add to broth, bring to slight boil, and then simmer ten minutes. In a sauce pan, melt margarine til bubbly. Add flour and mix well. Slowly add milk and heat til bubbly and thickened. Slowly add to broth mixture, stirring well. Do not boil, but let gently simmer for ten to fifteen minutes. Serve and enjoy!
