    4oz bonless, skinless chicken breast sliced

    1 cup celery chopped

    4 tsp olive oil

    2 cups water

    1 cup rice

    1/2 tsp curry powder

    1/2 tsp dried oregano

    1/4 cup raisins


in a skillet, brown chicken with celery in hot oil

stir in water, rice, curry powder (may adjust to taste) and oregano

bring to boil

simmer covered over medium heat for 15 minutes, stirring occasionally

stir in raisins and remove from heat

cover, let stand 5 minutes before serving

serves 4
