    Ground beef, lean, 16 oz
    Onions, raw, 1 medium (2-1/2" dia)
    Black Olives, 10 jumbo
    *White Rice, medium grain, 2 cup
    Beans, black, 1 cup
    *Cheese, Kraft Mexican Style Taco Cheese, 2.5 cup
    La Victoria Enchilada Sauce, 2 cup
    El Pollo Loco, 6 inch corn tortilla, 9 serving


Brown ground beef with chopped onions. Add chopped olives, black beans, brown rice and 1/4 cup enchilada sauce. In 13 x 9 baking dish layer tortillas, beef mixture, a little sauce, and about 1/4 - 1/2 cup cheese. I made four layers of tortillas with the fourth layer being the top. Pour on remaining enchilada sauce and cheese.
Cover with foil and bake for 30 minutes at 400 degrees. Remove foil and bake until cheese is golden brown.
Makes12 servings.
