This is the butteriest, silkiest soul warming soup you will ever eat. This is the butteriest, silkiest soul warming soup you will ever eat.
Number of Servings: 2


    2 cup frozen butternut squash cubed
    1 medium onion chopped
    1 med carrot chopped (optional)
    1 tsp garlic chopped
    2 tbs olive oil
    2 tbps fat free sour cream
    1/2 cup water
    1/8 tsp ground ginger
    1/8 tsp cayenne pepper
    1/8 tsp black pepper
    1/4 tsp sea salt


saute chopped onion in olive oil until soft, add spices and stir till combined. Add cubed squash & chopped garlic. cook until tender. add two chicken boullion packets & water. sautee for another five minutes on low. shut off heat and add 2 tbs of sour cream mixing to combine. pour entire mixture into a blender. be careful it's hot. hold down lid with a towel and puree till smooth. pour into a serving bowl and enjoy. another tiny dollop of sour cream for garnish.
