    .5 c rice
    16 oz tilapia
    .5 tbsp cumin
    1 tsp paprika
    .25 tsp salt
    .25 tsp cayenne pepper
    1 cup chopped tomato
    1 cup chopped onion
    1 cup frozen corn kernels
    1 tbsp olive oil
    1 c. chopped green peppers


Serves 4

Prepare rice according to package directions

mix together cumin, paprika, salt & cayenne. Sprinkle over tilapia.

cook fish over high heat (in skillet) for 1 minute on each side. Reduce heat to medium, turn fish, and cook for 2 min each side or until fish flakes easily.

Heat onion, green pepper, corn & tomatoe. Add to finished rice.
