Ingredients

3 Smoked Turkey Drumsticks
1 link Andouille Sausage
8 Ounces raw shrimp, deveined & shelled
2 Large Stalks Celery
1 Large onion
1 small red bell pepper
1 small yellow bell pepper
1 poblano pepper
1 can diced tomatoes
.25 cup whole wheat flour
.25 cup olive oil
Directions
Simmer the turkey legs in the crock pot with water to cover.
Remove legs, discard skin and bone, and refrigerate
Defat turkey broth & return to the crockpot or refrigerate and finish the next day.
Add vegetables and tomatoes to the stock in the crock pot.
When vegetables are just getting tender, add Andouille diced into small pieces.
Prepare roux in a small skillet or saucepan by stirring and cooking the flour and olive oil over medium heat until medium brown (dark brown if you dare), then stir into the crock pot
Add shrimp and turkey, cook until thickened.
Add garlic powder, worchestershire, tobasco, cayenne, and gumbo file' to taste. Great with okra, too!
Serve over rice.
