Introduction
These are good with honey or jam or put berries and whipped cream over them. If you make them less sweet (cut sugar by half), they're good as a biscuit dipped in soups or stews. Ingredients
-
2 cups Bob's Red Mill GF all purpose baking flour
4 tsps. baking powder
3 tsps. xanthan gum
1/4 cup sugar (or equiv. honey or sweetener)
2 Tbsp butter
2 Tbsp shortening
1 cup milk
Melt 1 more Tbsp butter to brush on top
Directions
Preheat oven to 425.
Combine flour, xanthan gum, sugar and baking powder. Cut in butter and shortening, Throughly mix in milk. Drop by large spoonfuls onto greased baking sheets (they won't change shape while baking, other than to puff up a little, so you can shape them a little now if you want).
Brush tops with melted butter (if you want them really sweet, sprinkle a little sugar on top). Bake for 12-15 minutes, until golden brown.
Makes 2 dozen.
