    1 pound frozen cauliflower
    1 cup chopped onion
    3 cloves chopped garlic
    2 tsp olive oil
    1 tsp salt
    1 cup chicken stock
    1 TBSP unsalted butter
    4 TBSP low fat parmesan cheese


Saute onions and garlic for 3 minutes in olive oil. Add frozen cauliflower and 3/4 cup chicken stock to pan.

Turn heat to low and cook until cauliflower is VERY soft and liquid is absorbed, stirring occasionally. If liquid is gone, add water until cauliflower is soft.

Blend in blender with butter, salt and cheese until smooth.

Can be served as mashed cauliflower, or over whole wheat pasta as a sauce.

Makes 5 - 1/2 cup servings
