    16 oz Ground Turkey Sausage
    1 cup chopped green bell pepper
    1 cup chopped onion
    4 cup fat free liquid egg substitute (Egg Beaters)
    4 lg egg
    2 cup fat free shredded cheddar cheese


Make 12 servings

Preheat oven to 350 degrees. Coat 6-cup muffin pan (ex-lg) with non-stick cooking spray.

In a medium non-stick skillet over medium-high heat, cook the sausage, pepper and onion for 5 minutes, or until sausage is browned.

Spoon mixture into a bowl and cool slightly. Stir in egg substitute and egg. Spoon mixture evenly into the prepared muffin pan. Sprinkle with cheese.

Bake 20 minutes or until egg mixture is set.

Cups can be refrigerated and reheated in the microwave at a later date.
