    1/4 cup * Onions
    1/2 cup * Egg substitute (Egg Beaters)
    1/2 cup * fresh Baby Spinach
    1/3 cup * Red Ripe Tomatoes
    Dash * Salt & Pepper (to taste)
    1 oz * President Fat Free Crumbled Feta


1. Preheat a nonstick small/medium skillet over medium heat. Add a spray or two of non-fat cooking spray

2. Add the onions to the warmed pan and cook until slightly soft (about 2-3 minutes)

3. Add in the egg substitute, reduce heat to low and cover for about 2 minutes (egg should start getting thick).

4. When bottom half of egg is firming up, add the spinach and tomato. Add salt and pepper to taste. Mix well and replace lid. Cook for about 3 minutes longer.

5. Remove from heat and fold in (or sprinkle on top) Fat Free Feta cheese

6. Makes one serving.
