Introduction

Quick and easy fix when I'm in a hurry and need to eat healthy on the run. Quick and easy fix when I'm in a hurry and need to eat healthy on the run.

Ingredients

    3 oz pre-grilled chicken breast strips
    large flour tortilla
    1tbsp green chilis
    1/4 cup mozzarella cheese (part skim milk)
    1/4 cup chopped diced tomatoes
    1/4 cup (or more) shredded lettuce
    1 tbsp sour cream
    chives (optional)

Directions

Heat large skillet on med/hi. Once skillet is heated, put tortilla in. Flip after it has heated on one side (2 minutes) and sprinkle with cheese. Layer on (on one side) chilis, chicken breast strips, diced tomatoes, and shredded lettuce. Top with sour cream and sprinkle with chives if you like. Roll the fajita and remove from heat. Serve with salsa or eat it plain.

Delicious, filling, and quick meal with lots of protein! Serves 1!
