Introduction

Number of Servings: 6

Ingredients

    1 lb. ground turkey
    1 pkg. your choice taco seasoning mix
    1 medium tomato
    1 small vidalia sweet onion
    1 pkg. romaine lettuce
    1 can dark red kidney beans (rinsed, drained)
    1/2 pkg. shredded Mexican cheese
    tortilla chips
    Italian dressing
    Optional:
    1 small can sliced black olives, drained
    fat free sour cream
    salsa

Directions

brown and drain your ground turkey (or lean ground beef)
season with the taco seasoning according to pkg. directions.
set aside.
Assemble your salad:
shred the lettuce into a big salad bowl. Dice tomato and onion and add to salad. Drain the kidney beans and black olives, if desired. Toss in with the salad. Now add your ground taco meat and 1/2 pkg. of cheese..(about 1 c.) Add about a cup of Italian dressing. Toss well...Serve into bowls...crumble some tortilla chips on top and if desired garnish with fat free sour cream and/or salsa!! Serve and enjoy!!
