    8 cups chicken or vegetable broth
    1 2" piece ginger
    1 2" piece lemongrass
    2 tsp red curry paste
    1 block extra firm tofu, drained
    1 carrot
    3-4 cups bok choy
    4 oz rice noodles, prepared according to pkg directions
    2 cups mushrooms, quartered
    1 tbs soy sauce
    1 tbs fish sauce
    1/2 cup scallions
    2 limes, divided


In a large pot, bring 8 cups broth, curry paste, lemon grass and ginger to a boil. Add carrots and tofu and cook until carrots are tender. Add mushrooms and cook 3-4 minutes. Add bok choy and prepared rice noodles and cook until noodles are warmed through. Add soy sauce, fish sauce, scallions and juice of 1 lime. Serve with extra lime wedges.
