    1 lb beef (use what you like!), tossed in flour
    3 Cans Beef Broth
    1 Can Tomato Soup
    1 Cup Cooked Barley
    1 Celery stalk, diced
    1/2 small onion, diced
    1/2 can green beans
    1/2 can corn
    4 small-medium potatoes
    1-2 carrots
    Salt and Pepper (mostly pepper, since the beef broth can be pretty salty) to taste.


Cut beef in to cubes. Toss in flour, and brown in a hot soup pot. Beef doesn't have to be cooked, just browned for flavor.

Pour beef broth in to pot, and use a wooden spoon to "deglaze" - scape up all the tasty bits off the bottom! There is lots of flavor from those bits. Finish adding in beef broth and can of tomato soup. Bring to boil. Add the rest of the veggies. Cook until veggies are just about cooked, i.e. potatoes are not quite fork-tender.

Just before potatoes are done, add cooked barley (note: pre-cook the barley in a separate pot, otherwise it will soak up half of your soup!) Simmer for a few minutes longer to get all those flavors all happy with each other. Serve with bread, crackers, etc.

I wish I knew how many servings this made, but we dug in and didn't bother to count. I'm guessing around 12 1-cup servings.
