Ingredients

    1 tsp Olive Oil
    1 whole egg
    3/4 c Egg Beaters
    1/4 c grated Parmesan Cheese
    1/4 c Chopped or Sliced Onions
    1/4 c Frozen Chopped Spinach (Drained)
    1/2 tsp or 1 clove garlic
    Salt & Pepper to Taste

Directions

Add olive oil to non stick pan, saute onions
Mix whole egg with egg beaters
Add salt, pepper, grated cheese, spinach,
Mix well. Add to medium heat pan.
Scamble till done. Makes 2 servings
