Number of Servings: 8


    .75 lb top sirloin, trimmed and diced
    .5 cup chopped onion
    1 clove garlic
    7 cups water
    1 (14.5 oz) can diced tomatoes, undrained
    .75 cup barley, uncooked
    .5 cup sliced celery
    .5 cup sliced carrots
    2 beef bouillon cubes
    .5 teaspoon dried basil
    1 bay leaf
    1 (12 oz) can corn, drained and rinsed
    1 (14.5 oz) can green beans, drained and rinsed.


In a 4-quart saucepan, brown meat. Add onion and garlic; cook until onion is tender. Drain any fat. Stin in remaining ingredients except for corn and green beans. Cover; bring to a boil. Reduce heat; simmer 50-60 minutes, stirring occasionally. Add corn and green beans, cook about 10 minutes or until heated through. Additional water may be added if the soup becomes too thick. MAKES 8 (1 CUP) SERVINGS.
