Introduction

This was an experiment that turned out pretty good. Only 15 minutes to prep. And I got my salad ready while it was cooking. This was an experiment that turned out pretty good. Only 15 minutes to prep. And I got my salad ready while it was cooking.

Ingredients

    * Chicken Breast, no skin, 2 breast, bone and skin removed (remove)
    * Feta Cheese, 4 oz (remove)
    * Spinach, frozen, 0.25 cup (remove)
    * Garlic powder, 1 tsp (remove)
    * *Onion powder, 1 tsp (remove)
    * Pampered Chef Greek Rub, 1 tbsp (remove)
    * Parsley, 1 tbsp (remove)

Directions

Soak toothpicks in water while you prep the chicken. This will prevent them from burning up in the oven.

Butterfly the chicken breast so that it opens wide.
Season chicken with onion and garlic powder and Pampered Chef seasoning on both sides (to taste).
Stuff each chicken breast with 1-2 tbsp of feta, about 2 tbsp or more of spinach.
Pull ends together so that stuffing is wrapped.
secure with Toothpicks.

Bake at 350 for 30-45 minutes.

Garnish with a couple of greek olives and serve with some salad and a little greek dressing.

Enjoy! Makes 2 servings.

I overestimated the feta and seasonings for the nutritional info. So season to your liking.
