A delicious and healthy take on a Mexican favorite! A delicious and healthy take on a Mexican favorite!
Number of Servings: 4


    1. 1 can diced green chiles
    2. 1- 1.5 lb. ground turkey (Jennie-O Extra Lean)
    3. 1/2 cup onion
    4. 2 small bell peppers
    5. 2 small banana peppers
    6. 1/2 cup carrots
    7. 1 tomato
    8. 4 Ole 8-Grain Tortillas
    9. Cayenne Pepper
    10. Taco Seasoning
    (optional mexican cheese)


Combine turkey, onion, half of the peppers, and carrots in a large skillet.
Cook until the turkey is done. Add a little water and the taco seasoning so that the mixture is not dry.
Preheat oven to 375.
Put the turkey mixture in the tortillas and lay them seam-down in a glass baking dish.
Top the enchiladas with the remaining bell peppers and tomatoes.
(optional sprinkle cheese on top)
Bake for 10 minutes.
