Introduction

This recipe makes alot! Great for dinner parties or freeze them individually for easy meals! This recipe makes alot! Great for dinner parties or freeze them individually for easy meals!

Ingredients

    2 lbs lean ground beef
    4 cups cheese
    40 oz (2 cans) enchilada sauce
    20 soft taco four tortillas
    fat free sour cream (optional)
    sliced jalepenos (optional)
    hot sauce (optional)

Directions

brown ground beef
add 1 can of enchilada sauce
add 2 cups cheese to beef mixture
spoon mixture in tortillas (approx .25 cup each)
roll and place in pan
cover with remaining sauce and cheese
bake at 350 until cheese is melted, about 30 minutes

I prefer using medium or sharp cheddar cheese. You can lower the calories by switching to your favorite low-cal cheese. Or you can omit the cheese completely.

We like to spice it up with a few slices of jalepenos and Frank's Red Hot!
