Ingredients

    Liquid ingredients:
    2 Egg white, lightly beaten
    2 TBS. Applesauce, unsweetened
    2 TBP. Honey
    3/4 cup Buttermilk, lowfat

    Dry ingredients:
    1/3 cup white flour
    1/4 cup Whole Wheat Flour,
    1/4 cup Brown Sugar, unpacked
    1 1/2 cups Kellogg's All-Bran With Extra Fiber Cereal
    3/4 tsp. Baking Soda
    3/4 tsp. Cinnamon, ground

    1/2 cup carrots, grated
    1/4 cup Pineapple, canned, crushed with juice

Directions

In a small bowl combine liquid ingredients. In a large bowl mix together dy ingredients. Add liquid mixture to dry imixture, stir until just blended. Stir in carrots and pineapple.

Spoon into a 12 count sprayed or lined muffin pan.

Bake at 400 degrees for 15-20 minutes.
