Ingredients

5 cups tart apples, chopped
200g (1 cup) sugar
160g (1 cup) dark raisins
2 T. oil
2 tsp. vanilla
1 egg, beaten
1/2 cup buttermilk
60g (1/2 cup) whole wheat flour
45g (1/2 cup) ground flax seed
110g (1 cup) oat bran
1-1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
Directions
in a large mixing bowl, combine apples with sugar, and raisins. Let stand 30 minutes or overnight.
Preheat oven to 350. Lightly grease a 9"x13" baking pan.
Stir into apple mixture, oil, vanilla and egg. Combine dry ingredients and stir into apple mixture alternately with the buttermilk. Stir just enough to moisten dry ingredients. Turn batter into pan. Bake 30-35 minutes or until cake test done. Cool slightly before serving. Makes 12 large pieces.
