Introduction

Italian sausage and red potato soup. Tastes just like a famous restaurants soup. You can probably reduce the fat content by using turkey/chicken sausage/bacon and reducing the amount of half and half.

If you can't find the sausage in bulk, you can buy links and removed from the casings before cooking, or cook the links and cut into bite size pieces before adding to the soup.

I prefer "Sara's Sausage" brand for this recipe

Ingredients

    16 oz spicy italian sausage
    4 thick cut strips of bacon
    1 tsp canola oil (can use bacon drippings, but adjust nutritional values accordingly)
    1/4 cup chopped onion
    1-2 cloves garlic, chipped
    6 cups water
    2 Tbsp chicken bouillon
    3 red potatoes, washed and sliced (about 1/4-1/2 inch slices)
    2 cups chopped kale
    1 1/2 cups fat free half and half

Directions

Brown the sausage, drain and set aside. Chop the bacon into squares, brown, drain and set aside. Wipe out pan, add 1 tsp oil and saute the onion for about a minute, add the garlic and cook for an additional minute or until onion is softened. Return the sausage and bacon to the pan, add the water and bouillon. Brink to boil, reduce heat and simmer, covered, for about 15 minutes or until the potatoes are tender. Add the kale and half & half, cook until heated (take care not to boil).

Enjoy with soft bread sticks (not included in nutritional value)

Makes about 10-1 cup servings
