    1 Can Libby's Pumpkin
    1 cup Egg Beaters (or 4 large eggs, but will increase sat. fat)
    2/3 cup water
    3 cups sugar
    2 tsp Baking Soda
    2 Tbsp Cinnamon
    1 tsp nutmeg
    1/2 tsp cloves
    1 tsp ginger
    1 cup applesauce
    2 cuops wheat flour
    1.5 cups white flour


Preheat oven to 350 degrees F.

In a bowl combine pumpkin, egg beaters (or eggs), water, sugar, and applesauce. Mix until combined.

In a separate bowl, combine baking soda, cinnamon, nutmeg, cloves, ginger. Mix well and then add to pumpkin mixture. Mix well.

In separate bowl (I use the same bowl as I used for the spice mixture) combine wheat flour and white flour and mix well. Add to pumpkin/spice mixture slowly to avoid lumps but don't overmix.

Divide into 36 paper baking cups (Important to use the baking cups or you'll never get them out of the muffin tins!!!). Cook approximately 20 minutes or until a toothpick or knife inserted into the middle comes out just barely clean.

If you want loaves divide the batter into three loaf pans but remember to grease the pans really well because this recipe likes to stick to the pan. Cook for about 45 minutes or until a knife stuck in the middle comes out just barely clean.

They are very moist and perfect for fast snacks that satisfy the sweat tooth!!!
