    1 5-oz can of Hormel 98% Fat Free Premium Chunk Breast of Chicken in water

    2 Tbsp. minced yellow onion

    1 button mushroom (rinsed and minced)

    Light Drizzle of Extra Virgin Olive Oil

    1/2 tsp. parsley (dried)

    1/2 tsp. chives (dried)

    1 Tbsp. Fat Free Mayo

    1/2 tsp sweet pickle relish (optional)

    1 Tbsp. Parmesan Cheese, grated

    Salt and Pepper to taste


Drain liquid from can, and put into a small bowl. Mince yellow onion and mushroom, and saute lightly in olive oil til onions are just transparent. Add parsley and chives, stir to combine. Removed from heat and add mixture to chicken, mix well.
Add fat free mayo, pickle relish, parmesan cheese, salt and pepper, mix well.

Yields 2.5 servings

(Note: For a more blended flavor, set completed mixture in the fridge for an hour or two and then serve on bed of lettuce or your favorite bread. Experiment with different seasonings to suit your own palate. Enjoy!)
