Ingredients

    1 cup water
    3/4 cup dry quick-cooking brown rice
    1/2 tsp chili powder
    1/2 red pepper, diced
    1/2 green pepper, diced
    1/2 can black beans, rinsed and drained
    lime, hot sauce, pepper if desired

Directions

Combine water, rice and chili powder, bring to boil, cook 5 minutes. Meanwhile, saute the peppers about 3 minutes, stir in the beans and a dash of pepper if desired. Stir into the rice.
