    8 ounces Chicken Breast, no skin, cooked
    2.5 cups water
    3.5 cups Swanson Chicken Broth 99% Fat Free,
    1 cup Scallions, chopped
    2 tsp Soy sauce, low sodium
    2 Cloves Garlic, minced
    .5 tsp Five Spice Powder
    1 tsp Ginger, ground
    3 Celery, stalks, small (5" long) sliced
    1 package (10 oz) Spinach, frozen
    1 medium Red Bell pepper
    2 cups Rice Noodles


In a large saucepan combine water, chicken broth, onions, soy sauce, garlic, five -spice powder and ginger. Bring to boiling, stir in celery, spinach, bell pepper and noodles. Return to boiling, reduce heat. Boil gently, uncovered, until noodles are just tender. Stir in cooked chicken, heat through.

You can add other spices if you like it hot like my husband!

Makes 6 nice size servings. If you have leftovers you may have to add more broth or water to make it soup again.
