Ingredients

    2 chicken breasts
    1 can mushrooms
    1 8oz can tomato sauce
    1.5 cup water
    1 can sliced black olives
    1/8 cup green pepper chopped
    (green onion optional, chopped tomato optional)
    1 packet mccormick enchilada seasoning
    1.75 cup cheddar cheese
    7 corn tortillas

Directions

1.cook chicken breasts then shred.
Preheat oven 375 degrees.
2. Prepare mccormick seasoning packet as directed.
Layer in baking dish: tortilla, chicken, mushrooms, green peppers, sauce, cheese, tortilla, chicken, mushrooms, green peppers, sauce, tortilla, sauce cheese. (top w/ green onion and tomato - optional)
Makes 2 layers.
Bake in oven 35 min or until cheese melted and golden brown on top.
