Introduction

Ingredients

    Shelled Edamame, 1 package frozen
    Grape Tomatoes, one pint
    Feta Cheese, .5 cup, crumbled
    Small Black Olives, one can
    2 T Red Onions, sliced thin
    Greek Salad Dressing, 4 Tbsp
    Dried Oregano 1 tbsp
    Extra Virgin Olive Oil, 2 tbsp

Directions

Boil edamame for about five minutes, drain and rinse with cold water until room temperature. Mix with tomatoes, olives, and onions. Add oregano, dressing and olive oil and feta last. Mix together. Best when refrigerated for a few hours and then served.

Makes 8 half-cup servings.
