    slice potato & onion thin
    Beat eggs


Preheat oven to 375
Thinly slice onion and saute in oil on medium heat, in oven proof skillet, until caramelized, about 10 min.
Thinly slice potato and add to onions. Cook until brown. Mix eggs with salt & pepper and a little water, or milk, until combined.
Pour over potato & onion. Cook until startes setting then put into oven for 5-10 min.

You can put cheese on the last minute if you wish.
