Perfect for cold winter nights. Perfect for cold winter nights.

    1 cup raw lentils, rinsed and picked over
    1 medium onion, chopped
    4 cups water
    2 medium carrots, chopped
    2 tablespoons soy sauce
    2 tablespoons cornstarch mixed with 2 Tbs water


Put lentils, onion, and water in a pot. Bring to a boil, then reduce to a simmer. Cook for 25 minutes. Add soy sauce and carrots. Cook til carrots are tender, about 15 minutes. Whisk cornstarch and water well in a separate bowl, then add to stew. Cook a minute or so until thickened. Makes three large servings. Goes well with rice or quinoa.
