    6 large eggs
    1/2 cup heavy cream
    126 grams Sargentos Reduced Fat Mexican Cheese
    265 grams Jimmy Dean Hot Sausage


Use a non-stick "Texas" size muffin pan. Spray well with cooking spray. Brown sausage and set aside. Beat eggs with cream and fill muffin cups evenly. Add sausage to muffin cups. Sprinkle tops with cheese. Bake for 25 minutes or until tops are lightly browned. Cool on wire rack for 5 minutes. Flip upside down onto rack and then turn right side up to cool.
