Ingredients

    3 potatoes, peeled, quartered, and sliced
    1 onion, whole or minced
    water to cover
    1 tb. Becel light Margerine
    1 c. chopped carrots
    1/2 c. chopped celery
    salt and pepper to taste
    1 c. frozen corn
    1 can fat free evaporated milk

Directions

Saute carrots and celery in margerine.

Salt and pepper to taste.

Add potatoes and onion, and enough water to just cover.

Simmer until veggies are tender. if using whole onion, remove.

Press potatoes against side of the pot with the back of a spoon. This will thicken the broth.

Add corn and evap milk. Warm, but do not allow to boil. Taste for salt and pepper.
