    1/2 cup Cottage Cheese (1% milkfat)
    1/2 tsp Tomato Paste
    Pepper to taste
    2 ox. Lox (Smoked Salmon) cubed finely
    2 Button Mushrooms, chopped finely
    Capers to taste
    6 slices of bell pepper (green, red, orange, yellow) chopped
    1 fresh chive, chopped
    4 leaves of romaine lettuce
    1 6" whole wheat pita (to be cut in half - each sandwich is 1/2 pita, stuffed)


Mix all ingredients in bowl except lettuce and pita bread. First stuff pita with romaine lettuce leaves so that you can stuff the salmon mixture in between the leaves to keep from softening the bread. Packs well for lunches, picnics, hikes, etc.
