Ingredients

    1/2 cup Smart Balance
    1 cup packed brown sugar
    3 Tbsp white sugar
    1 Tbsp flaxseed
    3 Tbsp warm water
    2 tsp vanilla extract
    1 3/4 cups whole wheat pastry flour
    1/2 tsp baking soda
    1/2 tsp baking powder
    1 cup dark chocolate chips

Directions

Preheat oven to 300 degrees F. Spray a cookie sheet with olive oil cooking spray.

In a medium bowl, cream together the Smart Balance, brown sugar, and white sugar until smooth.

In a small bowl, mix the flaxseed with the warm water until it has a gel-like consistency. Add to the sugar mixture with vanilla, and beat until mixed in.

Sift together the flour, baking soda and baking powder. Stir into the creamed mixture in small batches until completely mixed in. Stir in the chocolate chips.

Drop dough by heaping tablespoonfuls onto the prepared baking sheet. Cookies should be 1.5 - 2 inches apart.

Bake for 18-20 minutes (time may vary due to oven). Remove from baking sheets to cool on wire racks.

*Note: check your chocolate chips. Cholesterol might sneak in that way!
