Can use any sweet Bell Pepper for this recipe

2 - Sweet Bell Peppers
1 - Large onion
6 - Strips of Bacon
1 - Can 10 oz of Tomato Soup
1 - Cup of Brown Rice

2 - Sweet Bell Peppers
1 - Large onion
6 - Strips of Bacon
1 - Can 10 oz of Tomato Soup
1 - Cup of Brown Rice

Number of Servings: 2

Ingredients

    - Wash and cut top of Bell Peppers
    - Pre-Cook Brown Rice
    - Brown Bacon and Onion
    - You can add any spice you like, I use Garlic Powder and Dill Weed

    - Mix all ingredients - 3/4 of the Soup, Rice, bacon and onion together
    - Stuff the peppers

    -Place open side up on baking sheet or casserole, cover the pepper with the remaining Tomato soup

    -Bake in oven at 350 degrees for about 45 minutes

    Take Note - You can cut the under belly of the green pepper to a flat bottom to help with keeping the pepper upright making sure not to make a hole at the bottom.
