    2 Cups Cooked Pumpkin
    1 Leek, Sliced
    1/4 cup Pine Nuts
    1/4 can Lite Evaporated Milk
    400 grams Cooked Pasta
    2 tbls Parmesan Cheese


Boil Pumpkin. When soft drain and mash. Heat a frying pan and cook leek in about 2 tbls water. Add mashed pumpkin and pine nuts. Pour in lite evaporated milk and stir through. Serve over pasta and top with fresh parmesan cheese.
