    1 box Betty Crocker Super Moist Spice Cake Mix
    1 15 oz. can pure Pumpkin
    1 tsp. pumpkin pie spice
    2 egg whites
    1/2 cup water

    Cream Cheese mixture:

    8 oz. package Philadelphia Neufchatel Cheese
    1/2 cup granulated sugar
    1 egg
    1/8 tsp. salt
    1 tsp. vanilla extract


Mix together cake mix, pumpkin pie spice, pumpkin, egg whites and water until smooth. Set aside.

Beat cream cheese until smooth. Add sugar, egg, salt, and vanilla. Beat until creamy.

Line mini muffin pans with paper liners. Put 1/2 tsp. full of cake batter into muffin cup. Add 1/2 tsp. of cream cheese mixture on top of that, and then top with another 1/2 tsp. full of cake batter. The batter should be about even with the top of the muffin paper. They do not rise much. Bake at 350 degrees for 15-17 minutes, or until toothpick inserted into muffin comes out clean. Cool in pans. Remove from pans and store in airtight container after completely cooled. Can also be frozen.
