Introduction
Mediterranean Roasted Vegetable Stew Mediterranean Roasted Vegetable StewNumber of Servings: 10
Ingredients

1 large eggplant cut into healthy sized cubes
2 large zucchini cut into cubes
2 onions quartered
2 cups of diced potato
2 stalks celery chopped
1 cup chopped carrots
1 red pepper cut into large pieces
2 cups green beans
1/4 cup olive oil
Juice of one lemon
2 Tbsp Oregano
2.5 cups Aylmers no salt diced tomatoes
150 grams of Feta Cheese (15 grams to top each serving)
Directions
Lightly salt and place chopped eggplant and zucchini in a colander for one hour while you prepare other ingredients.
Toss Potato, celery, garlic and onion in lemon juice and 1/3 of olive oil. Place on baking sheet and roast for 1 hour at 400.
Rinse Eggplant and Zucchini, pat dry and place in large bowl. Add other ingredients except tomato, oregano and feta. Toss with 1/2 remaining olive oil and roast for 1 hour at 400 on separate cooking sheet.
Combine contents of each baking sheet and place in a baking (eg. Pyrex) dish. Cover with diced tomatoes and Oregano. Drizzle with remaining Olive oil and bake uncovered for 1 hour, stirring occasionally.
Top with 15 grams of Feta cheese and serve as a main dish or as a side.
