Ingredients

4 whole cloves
6-8 poblano chiles
2 tablespoon oil
1 pound beef for stewing
salt to taste or Homemade Adobo
1/2 teaspoon black pepper, ground
1 onion, chopped
1 large carrot, coarsely chopped
4 garlic cloves, chopped
5 red potatoes, medium, quartered
2 tomatoes, medium, diced
1 teaspoon cumino, ground
1 tablespoon oregano, ground
1 beef broth cube
1/4 cup cilantro, chopped
1 can white beans (optional)
Directions
Broil chiles until charred and place in sealed container to steam.
When cooled, peel skins, remove stem and seeds. Coarsely chop and set aside.
Heat oil in large pot.
Season beef with adobo and cook until browned over medium high heat about 5 minutes.
Add onion and garlic, cook until soft about another 5 minutes.
Add 3 cups water, bring to boil, lower heat, partially cover pot, allow to simmer until meat is tender, about another 30 minutes.
Add potatoes and carrots, cook until potatoes are soft another 20 minutes.
Add tomato, cumin, chiles, cloves, oregano, beef broth, cilantro and beans if using.
Simmer covered another 30 minutes.
Serve with white rice or warmed corn tortillas.
