Introduction

Ingredients

    non-stick cooking spray
    1 lb lean ground turkey
    1 cup diced carrots
    1 cup chopped green bell pepper
    1 cup chopped onion
    1 clove of garlic, minced
    1.5 cups salsa (hot, medium or mild)
    1.5 cups healthy pasta sauce
    1-19oz can black beans, drained and rinsed
    1.5 tsp ground cumin
    1 tsp chili powder
    1.5 tsp dried oregano
    12 oz whole wheat pasta (rotini, penne, or bow ties work best)
    2 oz cheddar (try reduced fat), shredded
    fat-free sour cream
    1-2 green onions, chopped

Directions

Spray large skillet with non-stick cooking spray. Brown turkey meat over medium heat, breaking up large chunks. Add carrots, green pepper, onion, and garlic. Cook 4-5 minutes, stirring occasionally.

Add salsa, tomato sauce, beans, and spices. Stir well. Bring to boil and then simmer 10-15 minutes.

Meanwhile, bring large pot of water to a boil and cook pasta according to package directions. Divide pasta between six serving dishes. Ladle chili over pasta and top with cheddar, green onions, and a dollop of sour cream.

Serves 6. Great for freezing individual portions and reheating for lunches.
